We are addicted to these easy to make, protein packed, banana oat muffins! They are great for a quick snack to get you through a long day or even as an after dinner dessert! More often than not we find ourselves digging into these tasty treats before they have completely cooled off.
Ingredients:
-2 cups of rolled oats
-1 teaspoon of baking soda
-a pinch of salt
-a pinch of cinnamon
-2 bananas
-2 large eggs
-6 oz of Greek yogurt (plain no sugar)
-½ cup of maple syrup (you can use no sugar maple syrup)
-½ cup of chocolate chips (optional, your choice)
Other:
Muffin pan
Large baking cups
Directions:
-Preheat the oven to 375 degrees
-In a food processor, or blender, blend 2 cups of oats until fine
-Add the rest of the ingredients (add the dry ingredients first)
-Blend all together until you have a fairly smooth liquid and pour (or scoop) in muffin cups (do not fill to the top)
-Add desired about of chocolate chips to each muffin and mix in with a small fork
-Bake at 375 for 15 minutes
-Remove muffins from baking pan and let cool on a wire rack or your counter
-If you find yourself unable to wait put a couple of muffins in the freezer for about 5 minutes
