Egg bites are some of our favorite breakfast options that can be prepped and frozen for future consumption. They are quick and easy, as well as easy to personalize based on how picky your eater is!
Ingredients:
-oil (avocado or coconut)
-10 small eggs
-tomato (1 small chopped fine)
-bell pepper (1 small chopped fine)
-spinach (1/2 cup fresh)
-ham (1/2 cup chopped)
-onion (1/4 cup chopped)
Directions:
-Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin with whatever your family uses. (Mine uses avocado oil)
-Mix eggs, tomato, bell pepper, spinach, ham, and onion together in a large bowl. Remove muffin tin from oven and ladle the egg mixture over the potatoes.
-Bake until set, or about 20 minutes
-Remove from tin, let cool, and enjoy or freeze for up to 2 months
